Eating in – in style

To celebrate our wedding anniversary last night, I “dressed” up the presentation of dinner so we could pretend we were eating out 😂.

Lightly crumbed calamari topped with fennel accompanied by baked eggplant stuffed with tomato and boccocini. Quite divine 😋.

Considering one of the benefits of fennel is its skill at attacking free radicals that cause premature ageing, and the fact that it’s our 24th anniversary, I reckon I picked the right ingredients for the occasion 🥳. And let’s not forget how good the Mediterranean diet is for health and longevity.
