Quite a bit of work goes into preserving olives. They must be picked off the trees, sorted, washed and put into a saltwater brine for some time. Then, depending on the desired result, they are preserved as is, into jars. Or dried in the sun before filling them into jars with olive oil.


These jars of black olives have been preserved in a saltwater brine and topped up with olive oil.
