Learn to make a basic pasta dough by hand, then roll into sheets with a pasta machine, before cutting to size. You will also learn to make the perfect tomato based sauce for this delicious oven baked dish. 

So that you have all you need to assemble your own lasagne tray, which you get to take home and cook. NB: Béchamel sauce is not traditional to our cuisine.

 

Class includes a sit down lunch of our traditional appetisers and salad, Lasagne of course and a light dessert with espresso coffee.

Class recommended for 17 years and older.

  • Pasta contains gluten and is made from plain flour and water only. Semolina is scattered over it for drying purposes. There is no egg.

     

    Sauce ingredients: olive oil, onion, garlic, salt, passata and herbs such as parsley, basil, bay leaf, rosemary and or oregano. Mince meat (veal, pork), peas.

     

    Lunch will also include homemade olives; foraged mushrooms preserved in olive oil and vinegar; home-baked bread (wholemeal, cornmeal and plain flour); salads (tomato, bocconcini, basil, oregano, salt, oil, vinegar); sauteed greens (dandelion leaves, fennel and homegrown spinach and rapa).

     

    Desserts may contain gluten, eggs, dairy, coffee and chocolate. For example ricotta-filled cannoli, tiramisu, affogato.

     

    Please notify us at time of booking if there are any of the above ingredients you wish to have left out.
